A warm and creamy Tomato Soup recipe perfect for chilly winter nights! This recipe comes together in less than 30 minutes making it perfect for weeknight dinners! It's warm, cozy, and perfect for grilled cheese dunking!
What's in This Tomato Soup Recipe?
This Tomato Soup recipe is so special to me because it's actually a twist on my grandmother's tomato soup. Her recipe was very delicious and very minimal ingredients. Just a can of crushed tomatoes, some chicken broth, and heavy cream. While it was a childhood favorite of mine, I wanted to add a little extra something to mine.
I like to add tomato paste to help punch up the tomato flavor, and of course, I'm going to add garlic to any recipe!
One of my favorite parts of this recipe is that it uses crushed tomatoes from a can, so you can stock up on these ingredients for your pantry and always have tomato soup at the ready! You also don't have to worry about pureeing the soup afterwards! It makes this soup so much easier and quicker, which is what we all want on chilly winter nights.
The Ultimate Grilled Cheese
I like to think of myself as a picky grilled cheese consumer. I have pretty strict requirements for my grilled cheese: crispy outer shell, melty gooey cheese, and minimal ingredients. You won't find me adding tomatoes, lettuce, or other ingredients to my grilled cheese. I prefer to keep it minimal with my grilled cheese.
My cheese of choice will always be colby jack cheese. I love the flavor of this cheese while still being able to get those perfect cheese pulls when you break your sandwich in half!
I start by spreading the outside of my grilled cheese with a light coating of mayonnaise. While this might seem odd, it gives the perfect tangy flavor to the grilled cheese and creates beautiful golden brown edges!
Then I add two slices of cheese in the middle of the bread. One slice doesn't give enough cheesy goodness, and three slices cause the cheese to not fully melt. Two slices is the perfect middle ground!
I cook the grilled cheese over medium heat, letting the cheese get perfectly melty.
No good tomato soup recipe is complete without a cheesy sidekick!
