Almond Croissant Cookies
These Almond Croissant Cookies are made with using almond flour and almond extract which turns these vanilla cookies into the perfect almond croissant cookie mashup!
The almond flour in these cookies creates the perfect chewy texture while also providing these cookies with a subtle almond flavor. Adding the almond extract with the vanilla extract gives these cookies the perfect almond flavor!
Now does this mean you can technically have these cookies for breakfast!?! Asking for a friend...
Almond Flour Vs Almond Meal
You might have heard of almond flour and almond meal, but what exactly is the difference between the two!? Can you use them interchangeably? These are all great questions!
Almond flour is made out of blanched, skinless almonds. Because of this, the almond flour is lighter in color and typically has a smaller crumb than almond meal. It's better used as a replacement for all purpose flour than almond meal.
Almond meal is made out of whole almonds which means it has little specks of brown throughout. The skins also contribute a slightly bitter taste to the almond meal which makes it better suited for savory dishes than sweet!
They're both pretty similar which means that you can use them interchangeably!
For this recipe though (and most of my baked goods), I recommend using almond flour!

Equipment
- 2 ounce Cookie Scoop
- Baking Sheet
- Parchment Paper
Ingredients
- 1 stick Butter
- ½ cup Sugar
- ½ cup Brown Sugar
- 1 Egg
- 1 teaspoon Vanilla Extract
- ½ teaspoon Almond Extract
- 1 ¼ cup Flour
- ½ cup Almond Flour
- ¼ teaspoon Baking Powder
- ¼ teaspoon Cornstarch
- Sliced Almonds
- Powdered Sugar for garnish
Instructions
- In a large bowl, mix together butter, sugar, and brown sugar until light and fluffy.1 stick Butter, ½ cup Sugar, ½ cup Brown Sugar
- Add in egg, vanilla extract, and almond extract.1 Egg, 1 teaspoon Vanilla Extract, ½ teaspoon Almond Extract
- Then add in flour, almond flour, cornstarch and baking powder.1 ¼ cup Flour, ½ cup Almond Flour, ¼ teaspoon Baking Powder, ¼ teaspoon Cornstarch
- Scoop out cookie dough and roll in sliced almonds.Sliced Almonds
- Let the dough chill for about 30 minutes
- Bake in a 350 degree preheated oven for about 10-13 minutes. You want the middle to still be soft.
- Sprinkle with a dusting of powdered sugar and enjoy!Powdered Sugar

I bought almond flour but the ingredients say “whole almonds”. I know in your notes you say get regular almond flour but my bag does say almond flour. Will it still taste good or should I go back to the store?
