I am so excited to share these cookies with you because they feature one of my favorite ingredients of all time: white chocolate chips!
My obsession with white chocolate chips knows no bounds; it's almost dangerous to keep them in the house because I can't control myself when they're around.
These cookies are a combination of dried cranberries, orange zest, and white chocolate. I know these might seem like three unlikely friends, but I can assure you, they are the best of friends. The white chocolate adds enough sweetness to balance out the cranberries while the orange zest helps brighten up the cookie so it doesn't feel too heavy!
It's a match made in cookie heaven!
Ingredients:
2 cups of flour
½ teaspoon of baking powder
½ teaspoon of salt
1 stick of butter
1 egg, plus one egg yolk
¾ cup of brown sugar, packed
¼ cup of sugar
2 teaspoons of vanilla
Zest a ⅓ of an orange
¾ cup of white chocolate chips
½ cup of dried cranberries
Preheat oven to 325 degrees.
In the bowl of a stand mixer, add the room temperature butter. Turn the speed on medium to start whipping the butter up.
Then, add both sugars to the butter and mix on medium speed, until fully incorporated and the mixture is light and fluffy.
Add in the egg and egg yolk one at a time, making sure the first egg is fully incorporated before adding the egg yolk. Add in orange zest.
While the butter is creaming, combine flour, baking powder, and salt. Whisk together.
After the eggs have been mixed in, add the vanilla.
Slowly begin to add in the dry mixture.
Once the dry mixture is almost fully added, add in the white chocolate chips and cranberries.
Take a medium cookie scoop and place large dollops of cookie dough onto a parchment paper-lined baking sheet.
Top cookies with a few extra white chocolate chips and bake for about 15 minutes.
These cookies are so delicious because the sweetness of the white chocolate balances out the zingy orange zest and the chewy cranberries. The texture in this cookie will blow your mind while your tastes buds rejoice with all the flavor pairings! Give it a try yourself!
