This recipe is a mash up of two of my favorite recipes, my Blueberry Crumble Cookies and Blueberry Muffins. I love the idea of having a portable breakfast you can snack on in the car, but with only the best parts of the muffin!
This is a quick and easy breakfast recipe that will be your new favorite breakfast! Who needs the whole muffin anyways!?

Cake Mix
I love to use cake mix as a shortcut in baked goods! If you think about it, cake mix is already made up of flour, sugar, leavening agent, and typically a flavoring! This means all of your essentials are already together in one box! By changing the amount of liquid and fat you add, you can create an unlimited amount of recipes!

Fresh or Frozen Blueberries
I have tested this recipe with fresh and frozen blueberries and it works perfectly with both! I personally like using frozen blueberries, which means you can make this recipe all year long!
If you do make these with frozen blueberries, I recommend baking them right away so the frozen blueberries don't start to melt and thaw!
Ingredients
- Water
- Flavorless Oil
- Eggs
- Vanilla Cake Mix
- Blueberries
- Butter
- Flour
- Sugar
- Brown Sugar
- Vanilla

Step-By-Step Instructions
- Step 1: Combine butter, flour, sugar, brown sugar, and vanilla. Mix together.
- Step 2: Add eggs, oil, and water to a bowl.
- Step 3: Then add in cake mix and blueberries.
- Step 4: Scoop a small dollop of the batter onto a sheet, then top with the crumble.
Hint: I like to leave about 2-3 inches of space between the muffin tops! They will rise quite a bit!
Variations and Substitutions
I love these Blueberry Crumble Muffin Tops! But there's a few other variations that you might like!
- Raspberry - substitute blueberries for raspberries for a delicious raspberry muffin!
- Lemon - use a lemon cake mix, add some poppy seeds, and create the best lemon poppyseed muffin top!
- Double Chocolate - use a chocolate cake mix, add some chocolate chips and have a delicious, chocolatey start to your morning!
Equipment
Baking Sheet - Baking sheets are perfect for this recipe because it allows the air to circulate around each muffin top to let them rise perfectly!
Cookie Scoop - I love to use cookie scoops in baking - I think I use them every recipe! Using cookie scoops allows you get to the same size shape with each muffin top! Here is a set similar to the one I use!
Top tip
I like to place these cookies about 2-3 inches apart on a baking sheet to give them plenty of room to bake!
Storage
- Room Temperature - store in an airtight container for about 3 days.
- Fridge - Storing in the fridge can dry these out, so I recommend leaving them at room temperature!
- Freezer - wrap in plastic wrap and store in an airtight container for about 2-3 months!
FAQ
I haven't tested this recipe using a gluten-free cake mix, but I assume it would work the same! If you try out, let us know how it goes in the comments!
That sounds delicious! It should work the same with a different kind of berry like raspberries or blackberries! If you used strawberries, I would cut them into small pieces and lay them on a paper towel to absorb the extra liquid.

Easy Blueberry Crumble Muffin Top (with Cake Mix)
Ingredients
- ¼ cup Water
- ¼ cup Flavorless Oil
- 2 Eggs
- 1 box Vanilla Cake Mix
- ½ cup Blueberries
Crumble Topping:
- 3 tablespoons Butter room temperature
- ½ cup Flour
- 2 tablespoons Sugar
- 2 tablespoons Brown Sugar
- ½ teaspoon Vanilla
Instructions
- Preheat oven to 350 degrees.
- In a separate bowl combine crumble ingredients: butter, brown sugar, sugar, vanilla, and flour. Stir together.3 tablespoons Butter room temperature, ½ cup Flour, 2 tablespoons Sugar, 2 tablespoons Brown Sugar, ½ teaspoon Vanilla
- Mix together eggs, oil, and water.¼ cup Water, ¼ cup Flavorless Oil, 2 Eggs
- Then stir in cake mix.1 box Vanilla Cake Mix
- Gently fold in blueberries.½ cup Blueberries
- Scoop onto a parchment-lined baking sheet, sprinkle with some of the crumble, then bake for about 15 minutes.
- Serve and enjoy!
