This recipe was inspired by by Single Serve Peanut Butter Cookie recipe that's delicious by itself but it's even better as an ice cream sandwich! I love to take the peanut butter cookies and sandwich them with chocolate ice cream, it's the perfect sweet and salty combination!

Step-By-Step Instructions:
- Step 1: Make the cookie dough first!
- Step 2: Then use a small cookie scoop to scoop the cookies onto a baking tray.
- Step 3: Using a piping bag, dollop the homemade ice cream in the middle of the cookies.
- Step 4: Freeze the ice cream sandwiches for about 2-3 hours. I like to let them soften for about 15 minutes before I eat them!
Hint: Whenever you're ready to eat them, let them soften at room temperature for about 15 minutes before you eat them! Otherwise the cookies will be too hard and the ice cream will pop out of the sides!
Variations
I love the combination of sweet vanilla ice cream with the chewy, cinnamon oatmeal cookies! But here are a few more options to make this cookie recipe work for anyone!
- Chocolate swirl - add a dollop of chocolate fudge on the cookie first, then pipe on the ice cream! You get a little chocolate swirl in each bite!
- Caramel - instead of a chocolate swirl, add a little dollop of caramel to the cookies before piping on the ice cream!
- Extra Cinnamon - if you really want to boost the sweet cinnamon flavor, add some cinnamon to the ice cream too!

For this recipe, I like to use a small cookie scoop to scoop out the cookies! Typically I like my cookies on the larger side, but since this is an oatmeal cookie ice cream sandwich and you'll be getting two cookies in one, I like to make them smaller.

Storage
The cookies by themselves will last about 4-5 days in the pantry in an airtight container! If you wrap the cookies securely and place them in the freezer, they can last about 1-2 months!
Top tip
After the cookie ice cream sandwiches have frozen, I like to wrap them up individually in plastic wrap, then store them in a gallon sized bag! You'll have an ice cream sandwich on hand for whenever you need it!

Ingredients
- 1 stick Butter room temperature
- ½ cup Brown Sugar
- ½ cup Sugar
- 1 Egg
- 1 teaspoon Vanilla
- 1 ¼ cups Flour
- ½ teaspoon Baking Powder
- ½ teaspoon Cinnamon
- 1 ½ cups Oats
Ice Cream:
- 1 pint Heavy Cream
- 1 teaspoon Vanilla
- ½ cup Powdered Sugar
Instructions
- Preheat the oven to 350 degrees
- Add the butter, sugar, and brown sugar to a bowl. With the mixer on low, cream the butter and sugars together.1 stick Butter, ½ cup Brown Sugar, ½ cup Sugar
- Then add in egg and vanilla. Mix together until just combined.1 Egg, 1 teaspoon Vanilla
- Then add in the flour, baking powder, and cinnamon. Using a spatula, begin to mix the dry ingredients in.1 ¼ cups Flour, ½ teaspoon Baking Powder, ½ teaspoon Cinnamon
- Add in the rolled oats and stir to combine.1 ½ cups Oats
- Scoop cookie dough into 1-½ inch drops on a parchment-lined baking sheet.
- Bake for about 10-14 minutes. The edges will be slightly brown and they are puffed up! The might still be a little soft in the middle but they’ll firm up as they cool!
- Make the Ice Cream:
- In a large bowl, whip heavy cream to stiff peaks. Then fold in powdered sugar and vanilla.1 pint Heavy Cream, 1 teaspoon Vanilla, ½ cup Powdered Sugar
- Add cream mixture to a piping bag and pipe a large dollop in the middle of one cookie. Then add another cookie to the top and press down slightly.
- Place in the freezer to chill under ice cream has hardened.
- Serve and enjoy!
