Non Dairy Butter? Tell Me More!
I have just recently began dipping my toes into the non-dairy butter pond, so to speak! My sister has a lactose problem so she’s cut out all dairy from her life. Because of this, it helps me to think outside the box when it comes to butter alternatives. Nobody wants to sit around and watch everybody eat a delicious buttercream frosted cupcake, am I right? Luckily, nowadays there’s a ton of non-dairy options, especially for butter. Keep in mind, if you don’t have a lactose problem and you want to add regular dairy butter, go ahead and use it! The recipe will be exactly the same! I have made this recipe 100 times before using regular butter and it tastes the same!
The one thing that I have to say that I really enjoyed about using a non-dairy butter alternative is that the butter itself was a lighter color. Regular butter has a yellow tone to it, so when you whip it into recipes, you’ll still get like a little tinge of yellow. But what I noticed with this recipe is it the butter was very light, almost white, so adding it into this sugar cookie dough make the dough stay a lighter color which really allowed the sprinkles to pop!
I love that you could see how bright and light and colorful the sprinkles were! I will definitely be trying to incorporate this non-dairy butter alternative to more things like my frosting to see if that also helps! Especially if you do want your batter, frosting, etc. to be a really light color.
Sugar Versus Brown Sugar
You’ll notice in this recipe versus my chocolate chip cookie dough recipe! There is no brown sugar in this recipe so let’s talk about why I switched from a mix of brown sugar and regular sugar to just plain sugar itself in these No Bake Edible Sugar Cookie Dough. Brown sugar is a mixture of sugar and molasses; depending on whether you get dark or light brown sugar depends on how much molasses was actually added to the recipe. I love brown sugar! I love the molasses flavor and texture that brown sugar has and adds to things! Brown sugar definitely has its place in the world and especially the cookie world.
For my regular chocolate chip cookies, I add brown sugar because it adds a different texture to the cookie which is what I want in a chocolate chip cookie. However, in sugar cookies I want there to be a ton of sugar flavor as well as a lighter color cookie. Because of that, I just add plain sugar to the recipe! I don’t want the sugar to have to fight with the brown sugar molasses flavor. I just want the sugar itself to shine. But don’t throw away that brown sugar in your pantry! There is definitely a place for it in baking and it should always be in your pantry as well!
How to Make This an Edible No Bake Sugar Cookie Dough
I know, I know, cooking the flour sounds so weird! Like why would you even do that? But, there is technically some bacteria in the flour that consuming a large amount can cause illnesses. I mean, of course no one is just going to take a spoonful of flour and eat it, right? But in this recipe, there is is a cup of flour which means you would be eating raw flour. So, in order to make this a totally food safe recip, you have to heat the flour to 180 degrees. Just throw it in a microwave-safe bowl, put in the microwave for 30 seconds increments until your flour reaches 180 degrees!
