Vanilla Almond Cookies
I know it might sound strange to add almond extract to vanilla cookies, but just hear me out on this one.
Adding the bright almond extract to the cookies wakes up vanilla extract and makes it more flavorful. Have you ever heard someone say that adding coffee to chocolate cakes helps it taste more like chocolate!? It's the same thing!
The almond extract just enhances the vanilla flavor without making the cookies taste like almond extract! Every time I do this trick, I get compliments on how delicious the desserts are!
Cookie Tips and Tricks
Cookies are one of my favorite desserts to bake because they come together so quickly! Here are some of my tips and tricks to make them even easier!
- When you're adding bigger things like pretzels, cookies, chips, graham crackers to cookies, I like to make sure I chop them into smaller pieces, about the size of a dime. When you're scooping the cookie dough, if you have too big of a piece it'll end up creating a smaller amount of cookie dough which could bake quicker than the other cookies.
- Make sure to scoop the cookie dough into the scoop and press gently, this helps make sure all cookies are the same size! Same size means they all cook at the same time and temperature which means no cookies burn!
- Use parchment paper to make sure no cookies stick to the pan! You worked hard for these cookies, you want to enjoy them at the end!

Golden Funfetti Cookies
Equipment
- 2 oz Cookie Scoop
- Baking Sheet
- Parchment Paper
Ingredients
- 1 stick Butter
- ½ cup Sugar
- ½ cup Brown Sugar packed
- 1 Egg
- 1 teaspoon Vanilla Extract
- ¼ teaspoon Almond Extract
- 1 ¾ cups Flour
- ½ teaspoon Baking Powder
- ¼ cup Sprinkles
- 1 cup Golden Sandwich Cookies chopped
Instructions
- Preheat oven to 350 degrees.
- In a large bowl, mix together butter, sugar, and brown sugar. Mix until everything is smooth and creamy.1 stick Butter, ½ cup Sugar, ½ cup Brown Sugar packed
- Add in one egg, almond extract, and vanilla extract. Mix together.1 Egg, 1 teaspoon Vanilla Extract, ¼ teaspoon Almond Extract
- Then, add in flour and baking powder. On a low speed, mix all the dry ingredients to the dough.1 ¾ cups Flour, ½ teaspoon Baking Powder
- Chop sandwich cookies. Add cookies and sprinkles to the dough and stir together with a spatula, making sure to scrape the bottom of the bowl to get everything mixed together.1 cup Golden Sandwich Cookies, ¼ cup Sprinkles
- Use a medium cookie scoop to scoop out the cookie dough and place on a parchment-lined baking sheet.
- Bake for about 12-14 minutes, the centers will still be slightly gooey.
- Let cool slightly, and enjoy*!
