There's nothing better than a cheesy, hearty dinner knowing you don't have a bunch of dishes to clean up after, which is why I love this Lazy Ravioli Lasagna! Full of all the flavors of lasagna in this easy to make (and easy to clean) lasagna with mushrooms!
This recipe is inspired by a series I did on Instagram for quick and easy dinner recipes! We all have busy lives, especially during the week and back to school season! These recipes are quick, easy, but are incredibly flavorful and delicious staples to have on hand. If you like this one, check out my other recipes from last week! My easy Mushroom and Tofu Ramen is my personal favorite, but the Stuffed Bell Peppers make for even better leftovers!

Ingredients
- Frozen Cheese Raviolis

Step-By-Step Instructions
- Step 1: Combine onion, mushroom, and garlic in a pan.
- Step 2: Add in ground beef and cook until brown.
- Step 3: Add in sauce and italian seasoning.
- Step 4: Begin to layer the lasagna, starting with a thin layer of sauce, then ravioli.
- Step 5: Then add sauce on top of ravioli and keep repeating until you get to the top.
- Step 6: Then add a generous layer of shredded cheese to the top.
Hint: Try to layer the raviolis in a single layer so they all cook at the same time!
Variations
This Lazy Ravioli Lasagna is so easy to throw together, it's definitely going to be on repeat in my kitchen this winter! Here are few other ways to switch it up:
- Veggie loaded - add some spinach and chopped zucchini to the ground meat sauce before adding it to the lasagna for extra veggies!
- Sauce it up - depending on what sauce you use, you can change up the flavor by using a garlic and onion sauce or a basil tomato sauce!
Equipment
No special equipment needed for this recipe! However if you're going to freeze this lasagna, I recommend using the foil dishes you can find at your local grocery store!
I love to use the foil pans when it comes to freezing dishes because then you don't have to worry about losing one of our pans to the freezer for a few months! Then when you go to bake your lasagna you have even less clean up because you can just throw it away afterwards!
Storage
Cover and store any leftovers in an airtight container and they'll be good in the fridge for about 3-4 days!
If you're going to freeze the lasagna, assemble everything together before cooking, then cover tightly. Store in the freezer for about 3-4 months!
Top tip
If you want to up the heartiness of this dish, you can use ravioli stuffed with mushrooms or meat! I like the cheese ravioli because it almost mimics the ricotta layer, but you can use other ravioli as well!

Nope! You can use the oven ready lasagna noodles! I love using these because you don't have to boil them beforehand!
Yes! If you use fresh ravioli, I do recommend boiling them first for about 5 minutes and letting them cool before adding them in!

Lazy Ravioli Lasagna with Portobello Mushrooms
Ingredients
- 1 bag Frozen Cheese Raviolis
- 1 tablespoon Olive Oil
- 1 Onion chopped
- 1 cup Portobello Mushrooms
- 3 cloves Garlic
- 1 pound Ground meat
- 2 teaspoons Italian seasoning
- Salt and Pepper to taste
- 1 jar Tomato Sauce
- 1 cup Shredded Mozzarella Cheese
Instructions
- Preheat oven to 400 degrees.
- In a large saucepan, add olive oil, chopped onion, mushrooms, and garlic. Let cook for about 5 minutes.1 tablespoon Olive Oil, 1 Onion, 1 cup Portobello Mushrooms, 3 cloves Garlic
- Then add in ground beef, italian seasoning, salt and pepper.. Cook until meat is fully browned.1 pound Ground meat, 2 teaspoons Italian seasoning, Salt and Pepper
- Pour over sauce and mix everything to combine.1 jar Tomato Sauce
- In a large baking dish, add a spoonful of sauce to the bottom. Then add one layer of frozen raviolis. Add half of the sauce mixture to the top of the raviolis with a sprinkle of cheese.1 bag Frozen Cheese Raviolis, 1 cup Shredded Mozzarella Cheese
- Then repeat with a layer of raviolis and half of the meat mixture, leaving a ½ a cup of sauce remaining in the pan. Add a sprinkle of cheese, then another layer of raviolis.
- Top the final layer of raviolis with the ½ cup of sauce (it's okay if this is just a thin coating), then add a generous amount of cheese to the top.
- Cover with foil and bake in the oven for about 30 minutes, then uncover and bake for another 15 minutes.
- Let cool slightly and enjoy!
