What's in Pecan Pie Cookies?
Pecan Pie cookies are the cookie version of one of my favorite pies! Instead of pie crust, this deliciously sweet pecan pie filling is nesteld inside a soft brown sugar cookie.
The cookie is soft and delicate that just melts in your mouth. The only sugar in this cookie dough is brown sugar so these cookies are a softer texture and a really delicious warm sweetness from the molasses in the brown sugar.
This cookie dough pairs perfectly with the sweet but crunchy pecan filling. This pecan filling has vanilla extra, brown sugar, and a little drizzle of maple syrup. It's a warm and sweet combination that adds the perfect crunch to these cookies.
No need to deal with pie crust when you have these perfect little cookies!
Pecan Pie Filling
Pecan Pie filling has to be one of my favorite pie fillings because the bottom is this soft creamy custard-like base with the crunchy pecans on top. It is the perfect balance of textures and I love it!
This recipe is slightly different from actual pecan pie filling because there isn't enough room to in these cookies to add everything that goes into pecan pie. To create all the flavors we love from pecan pie, this filling is made with brown sugar, vanilla extract and maple syrup. The maple syrup adds a sweet sticky component to the filling that gives all the ooey gooey middle part of a pecan pie!
Tips and Tricks
- Because this filling is going into a cookie rather than a pie, be sure to chop up your pecans into small pieces. Even if you buy the pre-chopped bag of pecans at the store, I like to give a few rough chops over that. It helps make sure you can get maximum amount of pecans into the cookie!
- To really punch up the nuttiness of the pecans, I like to add a drop or two of almond extract! The almond extract adds a little pop of brightness to the cookie filling and helps bring out the pecan flavor! I know it seems weird that almonds help pecans, but you just have to trust me!

Pecan Pie Cookies
Ingredients
- 12 tablespoons Butter room temperature
- 1 cup Brown Sugar packed
- 1 Egg
- 1 teaspoon Vanilla
- ½ teaspoon Cinnamon
- 2 cups Flour
- 1 teaspoon Baking Powder
- 2 teaspoons Cornstarch
- ½ teaspoon Salt
Pecan Filling:
- 1 cup Pecans chopped
- ⅓ cup Brown Sugar
- 3 tablespoons Heavy Cream
- 1 tablespoon Maple Syrup
- 1 teaspoon Vanilla
- ½ teaspoon Cinnamon
Instructions
- Preheat oven to 350 degrees.
- Combine butter and brown sugar in a bowl and mix together.12 tablespoons Butter, 1 cup Brown Sugar
- Add in egg and vanilla and mix until creamy.1 Egg, 1 teaspoon Vanilla
- Add in flour, baking powder, cinnamon, cornstarch and salt. Mix until a soft dough forms.½ teaspoon Cinnamon, 2 cups Flour, 1 teaspoon Baking Powder, ½ teaspoon Salt, 2 teaspoons Cornstarch
- Let dough chill while you assemble the filling.
Pecan Filling:
- To a bowl, add chopped pecans, brown sugar, syrup, heavy cream, cinnamon, and vanilla to a bowl.1 cup Pecans, ⅓ cup Brown Sugar, 3 tablespoons Heavy Cream, 1 tablespoon Maple Syrup, 1 teaspoon Vanilla, ½ teaspoon Cinnamon
- Stir everything together.
- Scoop dough into a ball using a small cookie scoop. Place on a parchment lined baking sheet.
- Make a small indention in the middle of the cookie dough using a small teaspoon or your thumb.
- Add a small scoop of the filling into the cookies*.
- Bake in the oven for about 12 minutes.
- Let cool slightly and enjoy!
