These Pumpkin Spice Cake Truffles are a fun fall take on the classic cake pop without the stick! They are full of pumpkin spice flavor, and to make them even better, they're dipped in white chocolate and coated in a cinnamon spice crumble!
What are Cake Truffles?
Cake pops, cake balls, cake truffles, all are different ways to say the same thing! I would describe them as if a piece of cake was rolled into a bite-sized piece of perfection!
Depending on the type of cake pop, some can be made using a mixture of cake and frosting. While these are also delicious, I do feel like they can be a touch too sweet, especially when you combine that with the chocolate coating of the cake truffle.
This recipe uses cake mix and milk to create a soft, moist, melt-in-your-mouth cake truffle that isn't overly sweet.
Then I dip in white chocolate and cover them in cinnamon cake crumbs. This crumb mixture is pretty similar to a crumble mixture that is on pies, loaf cakes, and donuts (like these Pumpkin Crumble Donuts!) except this crumble gets baked on a sheet pan to make sure the flour is food-safe and gets a little crunch in the oven as well! It's so good, I could probably eat the crumble all by itself!
Variations of Pumpkin Spice Cake Truffles
While I think adding pumpkin spice to everything (and anything) is a good idea, these cake truffles can be made in so many different ways.
Sprinkle Funfetti - you can make these truffles a fun birthday party treat by using vanilla cake mix and adding sprinkles! You can find that recipe HERE!
Chocolate - you could also use a chocolate cake mix and dip them in melted chocolate for the ultimate chocolate truffle!
Assembly Tips and Tricks
These Pumpkin Spice Cake Truffles are so fun to make but I have a few tips and tricks to make it go a little easier!
- Let the cake truffles chill in the freezer for 30 minutes to get nice and firm. This helps when prevent them from breaking apart when you dip them in the chocolate.
- Be sure to tap off excess white chocolate from the truffles before adding to the crumb mixture. This makes sure the crumb mixture doesn't get too much white chocolate mixed in! This could lead the crumb mixture to get too thick and clumpy to adhere to the white chocolate.
- Set the cake truffles on parchment paper to avoid them sticking to a plate after they've hardened and set!

Pumpkin Spice Cake Truffles
Ingredients
- 1 box Spice Cake Mix made to package instructions
- 2 tablespoons Milk
- 2 tablespoons Cream Cheese
- 2 teaspoons Vanilla Extract
Coating:
- 2 cups White Chocolate Chips
- 1 tablespoon Coconut Oil
- 4 tablespoons Brown Sugar
- 2 tablespoons White Sugar
- 1 teaspoon Pumpkin Pie Spice
- ½ teaspoon Cinnamon
- ¾ cup Flour
- 3 tablespoons Butter
Instructions
- To start, make box cake mix to package instructions and let cool fully.1 box Spice Cake Mix
- Once the cake is cool, crumble the cake into a large bowl and mix together with milk, cream cheese, and vanilla extract using a hand/stand mixer.2 tablespoons Milk, 2 teaspoons Vanilla Extract, 2 tablespoons Cream Cheese
- Using a small cookie scoop, scoop cake mixture into your hands and roll into balls.
- Place in the freezer to harden for 30 minutes.
- While the cake truffles are chilling, make the crumble mixture.
Crumble Mixture:
- Preheat oven to 350 degrees.
- Melt butter in a microwave-safe bowl for 30-second increments.3 tablespoons Butter
- To melted butter, add sugar, brown sugar, cinnamon, pumpkin spice, and flour.4 tablespoons Brown Sugar, 2 tablespoons White Sugar, 1 teaspoon Pumpkin Pie Spice, ½ teaspoon Cinnamon, ¾ cup Flour
- Stir together and sprinkle on a parchment-lined baking sheet.
- Bake for about 10 minutes, stirring the mixture halfway through.
- When the cake truffles have been chilling for 20 minutes, melt the white chocolate and coconut oil in the microwave in 30-second increments.2 cups White Chocolate Chips, 1 tablespoon Coconut Oil
To Assemble:
- Take one cake ball and drop it in the white chocolate, roll it around with a fork and gently tap off the extra white chocolate.
- Drop it into the crumble mixture and roll it around until fully coated.
- Place on a piece of parchment paper to let the chocolate set.
- Enjoy!
