I love a single serve recipe because it uses such a small amount of ingredients! It’s great for using up the last little bit of flour in your pantry! They’re a breeze to throw together and you don’t even need a cookie scoop for this recipe! Just split the dough in half or make one large cookie! It’s the best of both worlds: a delicious dessert and less dishes to wash! 

If there’s any leftover cookie (which is okay if there’s not!) you can store them in an airtight container at room temperature!

Types of Sprinkles 

Okay, I know that sugar cookies don’t always have sprinkles, but hey, life is too short to not add sprinkles!! (But it’s okay if you don’t have or have some strong objection against sprinkles, the recipe will still be delicious.) 

You can decide what kind of sprinkles works best for your recipe! 

Classic Rainbow Sprinkles – These are the classic cylinder sprinkles that I think hold up the best in baking recipes! You can also buy these in certain colors which is really fun around the holidays! Green sprinkles for St. Patrick’s Day, pink sprinkles for Valentine’s Day, 

Seasonal Sprinkles – A lot of times around the holidays, you’ll find specific sprinkles in the grocery store! For example, Halloween sprinkles will have little bat and ghost shapes! I recommend leaving these for topping cupcakes with! The shapes will get a little lost in the cookie dough!

Nonpareil Sprinkles – These are the tiny little ball sprinkles! These are perfect for topping icing with, but I don’t always love the texture in cookies! 

Equipment Needed:

Small Bowl – Since this recipe is small, you only need a small bowl to mix everything! Leave the large bowl for a whole batch of cookies and save the space in your dishwasher! 

Rubber Spatula – Because this recipe uses a small amount of butter, I prefer to use a spatula to mix everything together instead of a hand mixer!

Baking Sheet – You can use a small or medium baking sheet for this recipe! 

Parchment Paper – For all my baking recipes, I have to use parchment paper! It makes for easy clean up and ensures nothing sticks to the pan!

Ingredient List:

  • Butter
  • Sugar
  • brown sugar
  • Vanilla Extract
  • Almond Extract – Adding a drop of almond extract helps brighten the vanilla extract and adds that classic sugar cookie flavor! Just a drop will do, because almond extract is very powerful! 
  • Egg Yolk
  • All Purpose Flour
  • Baking Powder
  • Sprinkles

Step by Step Instructions:

Step 1. Add butter, sugar, and brown sugar into a bowl. 

Step 2. Add egg yolk, vanilla extract, and almond extract.

Step 3: Then add in dry ingredients. Add in colorful sprinkles. 

Step 4. Place on a cookie sheet and bake!

Helpful Tips and Tricks

When it comes to these cookies, I like to just portion the cookie dough in half and scoop it right onto a prepared baking sheet! However, you can also just scoop it into one big cookie! Keep in mind, it might affect the baking time if you do this! 

Since this recipe makes two cookies, I highly recommend scooping some vanilla ice cream in the middle and making a delicious ice cream sandwich with it! 

Usually I recommend measuring sprinkles with the heart but since this is a single serve cookie recipe, I recommend only using about a tablespoon of rainbow sprinkles so it doesn’t overwhelm the cookies!

Single Serve Sugar Cookie

This Single Serve Sugar Cookie is the perfect combination of crispy edges and a gooey middle. It's also the perfect amount of cookies for an ice cream sandwich, which I recommend trying.

Ingredients

  • 2 tablespoons Butter room temperature
  • 2 tablespoons Sugar
  • 1 tablespoon Brown Sugar
  • 1/4 teaspoon Vanilla Extract
  • 1 drop Almond Extract
  • 1 Egg Yolk
  • 1/3 cup Flour**
  • 1/8 teaspoon Baking Powder
  • Sprinkles

Instructions

  • Preheat oven to 350 degrees.
  • Add butter, sugar, brown sugar, and mix together.
    2 tablespoons Butter, 2 tablespoons Sugar, 1 tablespoon Brown Sugar
  • Add in egg yolk, vanilla extract, and almond extract to a bowl and mix until everything is combined.
    1/4 teaspoon Vanilla Extract, 1 drop Almond Extract, 1 Egg Yolk
  • Stir in flour (see note) and baking powder.
    1/3 cup Flour**, 1/8 teaspoon Baking Powder
  • Mix in sprinkles.
    Sprinkles
  • Scoop onto a baking sheet and bake for about 10-12 minutes.
  • Let cool slightly and enjoy!

Notes

**If you want a thicker cookie, use 1/3 cup of flour, if you want a cookie that is thinner and will spread out more in the oven, use 1/4 cup of flour!

  1. I tried this recipe and for some reason it turned out like little dough balls rather than cookies?

      1. This recipe did not turn out well for me at all ! The cookies weren’t cookie consistency at all when baked ? and I followed the exact recipe .
