Chewy, fudgy blondies filled with everything you love about s'mores: melty chocolate, crunchy graham cracker, and gooey sticky marshmallows. Not to mention, this whole recipe can be made in just one bowl! A no mess S'mores Blondies that doesn't require me to build a fire? Sign me up!
So What IS a S'mores Blondie
I like to think of blondies as a sister to a brownie. Both are made with similar ingredients, have a crispy, crackly top, and a chewy, fudgy inside. However, the main difference is brownies have cocoa powder and blondies do not, which allows the brown sugar to shine.
I feel like a blondie kind of tastes like the middle section of a chewy chocolate chip cookie. Which is basically the most delicious part and that’s probably why I love them so much.
No Dishes, No Problem
Let’s not forget to talk about one of the best things about blondies: they can be made all in one bowl. Like, how amazing is that? You can have a delicious decadent wonderful dessert and you only have to clean one dish? You know there’s room in your dishwasher for that one.
I like to start by melting the butter first, that way you can just add all the ingredients to that one bowl!
Thick Or Thin?
I love a thick,chewy cookie so when I make my blondies, I make them in an 8 x 8 square dish. It does take longer to cook this way, but you get a thicker blonde, which is really what I like. If you would like a thinner blondie or would like this to be ready quicker (I feel you, girl) then you can also make it in a 9 x 13 rectangular pan. The cook time would be about 30 to 35 minutes, but make sure you check it with a toothpick in to make sure it’s all the way done. You can also get more blondies out of the 9 x 13 pan.
So if you’re feeding a small crowd (or just yourself) and you like thicker, fudgier blondie, I would make it in an 8 x 8. If you’re feeding a crowd, or are in a rush, then I would make it in a 9 x 13.
Either way, they’re going to be delicious.
S'mores Everything Please
I feel like I am addicted to smores flavoring. I have loved s’mores since I was a little girl. Cupcakes, pop tarts, ice cream, if there was a s'mores flavor, I was getting it. So adding s’mores flavoring to a Blondie was like a no-brainer. It’s like everything you love about a s'mores but in this perfect little square that you can just pick up and devour, with no mess and no fuss.
The best way to get that classic toasted marshmallow is to put the marshmallows on the top for the last few minutes. When I was recipe testing this I had the marshmallows all mixed in, and some of the marshmallows got a little bit too crispy or some of them just melted into the batter and you couldn’t really get a marshmallow bite. So I found the best way to get a really good ooey-gooey marshmallow would be to put them on the very top That way they get a little bit brown but also can still be soft and gooey and get a really cool marshmallow moment.
S'mores Blondies
Ingredients
- 1 ¾ cup Flour
- ¾ teaspoon Baking Powder
- 1 teaspoon Salt
- 2 cups Brown Sugar packed
- 2 sticks Butter melted
- 2 teaspoons Vanilla
- 2 eggs
- 4 ounces Chocolate chopped
- 1 cup Marshmallows mini
- 1//2 cup Graham Crackers crushed
Instructions
- Preheat oven to 350 degrees.
- In a small pot on the stove, melt 2 sticks of butter. Set aside to cool slightly
- When the butter has cooled slightly, add in the sugar and vanilla.
- After the sugar is fully incorporated, add in the eggs.
- Add the flour, baking powder, and salt to the butter mixture.
- When the flour is almost mixed in, add in chopped chocolate and graham crackers.
- Pour the batter into a parchment-lined square baking dish.
- Place in the oven to cook for about 30-40 minutes. You want a toothpick inserted to come out clean!
- In the last 2 minutes, add the mini marshmallows to the top.

I can promise you, these did not last long in my house. I loved the chewy center with the melty chocolate and the gooey marshmallow. It's the perfect balance of s'mores flavors to chewy blondie.
