Okay, okay, I know Christmas cookie season is over, but my love for warm cookies is far from over. In fact, I don't think this love affair will ever be ending.
There is really nothing better than a warm cup of hot chocolate on a cold winter night... well unless there's a plate of hot chocolate cookies!
I really wanted these cookies to have the best parts of hot chocolate: the rich chocolatey flavor, the ooey-gooey marshmallow, and the warm cozy feeling.
It should go without saying that I recommend eating these cookies while they're still warm.
I used a large marshmallow that I cut in half, but you could definitely sub out three mini marshmallows instead! I don't recommend putting a whole large marshmallow because that could overwhelm the cookie. Half a large marshmallow is the perfect cookie to marshmallow ratio.
Recipe note: I have spelled marshmallow wrong every time I typed it out. That really didn't involve the recipe at all, I just felt you should know that.
Ingredients:
1 ¾ cup of flour
¾ cup of unsweetened cocoa powder
½ teaspoon of baking soda
1 teaspoon of baking powder
A sprinkle of salt
½ cup of sugar
½ cup of lightly packed brown sugar
½ cup of butter, softened
2 large eggs
¼ cup of milk, plus one tablespoon
1 teaspoon of vanilla extract
½ cup of chocolate chips
1 bag of large marshmallows
Flakey salt, for garnish
Preheat the oven to 350 degrees.
In a large bowl, mix together flour, cocoa powder, baking soda, baking powder, and salt. Whisk together and set aside.
In the bowl of a stand mixer, cream together butter, sugar, and brown sugar.
Add in one egg at a time, waiting until each egg has been fully incorporated.
After the eggs have been added in, add ⅓ of the dry ingredients to the butter mixture. Followed by half of the milk mixture. Continue to alternate until all the dry ingredients have been added in.
Using a small cookie scoop, place dollops of the batter onto a parchment paper-lined baking sheet about two inches apart.
Bake in the oven for about 10 minutes.
Then cut a large marshmallow in half and place it cut side down on the cookie. Bake for another minute or two.
Remove from the oven and let cool.
Melt the chocolate chips in a microwave-safe bowl until smooth and creamy. Pour the melted chocolate into a piping bag and cut just the tip off.
Drizzle the chocolate over the marshmallow and sprinkle with just a little flakey salt.
Wait for the chocolate to harden and the cookies are ready to serve!
These cookies are everything you would want hot chocolate in cookie form to be (and I'm not just saying that because I made them)! The cookie is soft and warm, while the marshmallow is gooey and sweet. The little hint of flakey salt on top is really the cherry on top and takes these cookies to the next level!
