Peanut butter and marshmallow are a match made in cookie heaven and these Fluffernutter Cookies are no exception to that! Soft peanut butter cookies stuffed with a large dollop of marshmallow fluff to create an ooey-gooey, peanut butter cookie that's out-of-this-world delicious!
What's a Fluffernutter Cookie?
Peanut butter is such a delicious combination in cookies because it goes with everything! Chocolate, caramel, marshmallow, etc. Such a delicious flavor combination, maybe even one of my favorites!
But peanut butter and marshmallow together!? It’s so insanely good!
These Fluffernutter Cookies start with a soft, peanut butter cookie. Almost like a Peanut Butter Blossom, but even better because these don’t just get stuffed with a piece of chocolate, they get stuffed with marshmallow!
After the peanut butter dough is made (which tastes amazing, by the way), then you flatten out the dough, dollop a large plop of gooey, sticky marshmallow fluff in the middle. Gently press the edges of the dough around the marshmallow fluff and then bake in the oven.
While the cookies are baking, they spread out which leaves a delicious dollop of gooey, warm, melty, marshmallow in the middle of the cookie. Because the marshmallow spreads with the dough, you get a bite of delicious marshmallow in every single bite!
Is your mouth watering yet? Because mine is!
Peanut Butter All The Way
Let’s talk about peanut butter for a bit. It’s only fitting considering it plays a large roll in these Fluffernutter Cookies. They literally couldn’t be fluffernutter cookies without peanut butter!
I’m a creamy peanut butter gal through and through. Crunchy peanut butter just doesn’t do it for me. However, my mom loves crunchy peanut butter and I know she would ask if she could just use crunchy peanut butter instead.
I have to admit that I haven’t tried this recipe with crunchy peanut butter. My theory is that I believe it could work and it might even give you a nice little crunch added in there. However, I haven’t tested it yet, so it could affect the way the cookie dough wraps around the marshmallow fluff.
Either way, it would still be delicious!
As far as subbing in other nut butters, I’m sure that would be fine too! You just want to be careful about using all natural, organic butters that contain more oil that regular peanut butters do, because this could affect the liquid ratio in the cookies. You might need to add a bit more flour if that’s the case!

- Flour
- Baking Soda
- Baking Powder
- Salt
- Butter
- Sugar
- Brown Sugar
- Peanut Butter - Creamy peanut butter all the way!
- Egg
- Vanilla - Don’t skip adding vanilla to your cookies! It’s the easiest way to make sure your cookies are full of flavor!
- Marshmallow Fluff - You could also sub large marshmallows for this! I like the gooeyness of the marshmallow fluff in this!

Tips and Tricks
The cookie dough is a pretty easy process, adding the marshmallow fluff can get a little difficult depending on which way you want to add it!
If you want, you can just add little dollops straight into the cookie dough, swirl it around a bit, then scoop the cookie dough. This would create more of a swirled effect and you’ll get the marshmallow spread throughout the cookie dough instead of on top! Still delicious though!
I made these cookies by flattening out the dough into a little disc, then putting the marshmallow fluff in the middle, then folding the dough up around the fluff, where there’s still a little poking out the top. I like this way because the fluff is still on the top when the cookies bake!
Or you could just cover the marshmallow fluff entirely with the cookie dough and have it be a secret surprise inside!
Either way, chilling the dough for about 15 minutes makes it easier to work with! I don’t typically chill my dough, but I think it helps with this recipe!
However you choose to make them, it will still come out delicious! With peanut butter and marshmallow, you really can’t go wrong!

Fluffernutter Cookies
Ingredients
- 1 ½ cups Flour
- ½ teaspoon Baking Soda
- ½ teaspoon Baking Powder
- Pinch Salt
- 1 stick Butter room temperature
- ½ cup Sugar
- ½ cup Brown Sugar packed
- ½ cup Peanut Butter
- 1 Egg
- 1 teaspoon Vanilla
- ½ cup Marshmallow Fluff
Instructions
- Cream together butter and peanut butter.
- Then, add in brown sugar and sugar.
- After the sugar has been fully incorporated, add in the egg and vanilla extract.
- Then add in flour, baking soda, baking powder, and salt.
- Once the dough is completely mixed together, place in the freezer for about 15 minutes.
- Preheat the oven to 350 degrees.
- Take a scoop of the dough in your hands and flatten it out into a disc. Put a spoonful of the marshmallow fluff in the center of the disc, then use your hands to gently press the dough around the marshmallow fluff, almost like you're going to cover up the marshmallow.
- Place on a baking sheet and bake for about 15 minutes.
- Let cool and enjoy!
