The name of this recipe alone should tell you that this is going to be a wild (and delicious) ride! These Peanut Butter Potato Chip Cookies are loaded up with sweet and salty vibes with the best textural combination ever!
Creamy peanut butter mixed with crunchy potato chips and melty dark chocolate make these cookies an amazing combination!
I like to use dark chocolate chips because I think that pairs the best with the potato chips, but you could use whatever chocolate you like best!
Original or Ruffle Chip Cookies
When it comes to adding potato chips in cookies, there's really no rules here! You can use whatever type of chip you like best!
However, I would recommend staying away from any kind of flavored chip. I'm not quite sure how sour cream and onion chips would work in cookies...
I like to just crush up the chips with my hands before I add them to the cookie dough, but you could also just crush them up in the bag! Or if you wanted to get really fancy, you could add them to a plastic bag and use a rolling pin to crush them.
You want the potato chips to be in pieces about the size of a dime; any smaller and they'll dissolve too much in the cookie dough!
Cookie Tips and Tricks
Cookies are some of my favorite desserts to make, so here are a few of my tips and tricks that I've learned along the way:
- Using room temperature butter is the best way to make these cookies easier to make! Let your butter come to room temperature for about an hour or two before baking! If you forget, you can pop the butter in the microwave for 5 seconds, then flip over and microwave for another 5 seconds!
- Make sure the flour is almost fully mixed in before adding in the chips and chocolate! It's okay to see a few bits of flour when you add in chips!
- If your cookies spread too much in the oven, use a round cookie cutter and place it around the cookie. Gently swirl it around to push the cookie back into itself! Not only does this create a perfectly round cookie, but it also helps the cookie get a thicker texture!

Equipment
- 2 oz Cookie Scoop
- Baking Sheet
- Parchment Paper
Ingredients
- 1 ½ cups Flour
- 1 teaspoon Baking Powder
- Pinch Salt
- 1 stick Butter room temperature
- ½ cup Sugar
- ½ cup Brown Sugar packed
- ½ cup Peanut Butter
- 1 Egg
- 1 teaspoon Vanilla Extract
- ½ cup Potato Chips
- ½ cup Dark Chocolate Chips
Instructions
- Preheat the oven to 350 degrees.
- Cream together butter and peanut butter.1 stick Butter room temperature, ½ cup Peanut Butter
- Then, add in brown sugar and sugar.½ cup Brown Sugar packed, ½ cup Sugar
- After the sugar has been fully incorporated, add in the egg and vanilla extract.1 Egg, 1 teaspoon Vanilla Extract
- Then add in flour, baking powder, and salt.1 ½ cups Flour, 1 teaspoon Baking Powder, Pinch Salt
- Once the mixture is almost mixed together, add in chocolate chips and crushed* potato chips½ cup Potato Chips, ½ cup Dark Chocolate Chips
- Using a medium cookie scoop, scoop out the dough onto a parchment lined baking sheet.
- Bake for about 15 minutes when the edges are golden brown.
