What's Inside Rice Krispie Treat Cookies?
These cookies are the perfect mash up of a chewy marshmallow treat and a soft and chewy cookie! They start out with a base of butter, sugar and brown sugar to create the perfect cookie texture.
Once the cookie dough is assembled, I scoop a little in my hand and flatten it into a disk. Then pop a marshmallow in the middle and wrap the dough around it. I like to roll the cookie dough in crispy rice cereal to get the perfect outer edge.
These cookies have the perfect crispy edges with a soft and gooey middle from the melty marshmallow. It truly is the most nostalgic cookie bite ever!
Marshmallow Cereal Cookies
Marshmallows were made to go into cookies, and there's nothing anyone could do to convince me differently! I love getting that gooey marshmallow pull right in the middle of the cookie! It's my favorite part.
I used crispy rice cereal so these cookies could have that classic rice krispie treat feel, but the options are endless for this recipe!
You could really use any type of cereal in these cookies and it would still be delicious! A fruity cereal, cinnamon cereal, or even a chocolatey cereal would be just as delicious!

Rice Krispie Treat Cookies
Equipment
- 2 ounce Cookie Scoop
- Baking Sheet
- Parchment Paper
Ingredients
- 1 stick Butter room temperature
- ½ cup Sugar
- ½ cup Brown Sugar packed
- 1 Egg
- 1 teaspoon Vanilla Extract
- 1 ¾ cups Flour
- ½ teaspoon Baking Powder
- ½ cup Rice Cereal
- 1 cup Marshmallows
Instructions
- Preheat oven to 350 degrees.
- In a large bowl, mix together butter, sugar, and brown sugar. Mix until everything is smooth and creamy.1 stick Butter, ½ cup Sugar, ½ cup Brown Sugar packed
- Add in one egg and vanilla extract. Mix together.1 Egg, 1 teaspoon Vanilla Extract
- Then, add in flour and baking powder. On a low speed, mix all the dry ingredients to the dough.1 ¾ cups Flour, ½ teaspoon Baking Powder
- Mix in cereal.½ cup Rice Cereal
- Use a medium cookie scoop to scoop out the cookie dough. Flatten out the dough into a disk and place one large marshmallow.1 cup Marshmallows
- Roll into a ball, covering the marshmallow completely. Then roll the cookie dough ball in rice cereal.
- Place on a baking sheet and bake for about 12-14 minutes, the centers will still be slightly gooey.
- Let cool slightly, and enjoy*!

I made these for my husband's birthday. He's not a big cake fan. They were a HUGE hit. Great flavor, I think I may try adding browned butter next time bc that's what I do in my rice krispies. Imo the texture is better the next day, but I used a large cookie scoop. Super easy and delicious. I also topped with flaky salt. Will be making these again for sure!

I followed the directions and the only thing I did different was use my kitchen aid stand mixer to mix and my dough was very crumbly and dry. Any ideas to retry?

Oh no! I'm sorry that happened! Was your butter room temperature by chance? Having room temperature butter helps everything mix together easier!

For the Marshmallows, are they large or mini? I see mini but the instructions say “place a Large marshmallow”

You could use either, but I think the large marshmallows work better! Sorry for the confusion!

Do these cookie dough balls freeze well even after rolling in the cereal?

If you roll them in the cereal, they still freeze well! If you were going to keep the cookies in the freezer for longer than 1 month, then I wouldn't roll them in the cereal!
