The best chocolate cereal cookies might have to be these Chocolate Cereal S'mores Cookies with the crunchy sides and the gooey marshmallow center. With pops of cinnamon cereal, chocolate cereal, and melty marshmallow, these cookies are giving all the s'mores vibes in cereal cookie form!
This recipe was inspired by my Rice Krispie Treat Cookies! The gooey marshmallow and crispy cereal was a match made in cookie heaven and I knew I needed to make this chocolate cereal version too!

Here's a step-by-step guide to help make these cookies even easier!
- Step 1: After mixing together the butter, brown sugar, and sugar, add in the egg and vanilla extract.
- Step 2: Then add in the flour, baking powder, cinnamon and mix together. Then add in cinnamon and chocolate cereal.
- Step 3: Use a cookie scoop to scoop out the dough.
- Step 4: Flatten the dough into a disc and place a large marshmallow in the middle. Then wrap the dough around the marshmallow.
- Step 5: Roll the cookie dough ball in the remaining chocolate and cinnamon cereal.
- Step 6: Bake in a preheated 350? oven for about 15 minutes.
Hint: Don't forget to add a sheet of parchment paper to your baking sheet to make sure the cookies don't stick to the pan!

Equipment
These cookies are pretty easy to make but I do recommend using a cookie scoop to help these cookies all turn out the same size. When it comes to cookies, if a few are smaller than the rest, they can burn before the others are done! It's best to make sure all cookies are the same size!
I also recommend using parchment paper on your baking sheet to make sure the cookies don't stick! The marshmallow can get a little sticky, so the parchment paper makes clean up a breeze!
Storage
To store these cookies, let them cool fully first before storing them in an airtight container. You can leave them in the pantry for about a week!
I haven't tried to freeze these cookies as the cereal and marshmallow could get slightly funky on the outside! If you try this, let me know in the comments!
Top tip
Because these cookies tend to spread in the oven, I like to refrigerate my cookies for about 30 minutes after I'm done rolling them in the cookie cereal. This gives the cookies time to chill after all the handling of them.

Ingredients
- 1 stick Butter room temperature
- ½ cup Sugar
- ½ cup Brown Sugar packed
- 1 Egg
- 1 teaspoon Vanilla Extract
- 1 ¾ cups Flour
- ½ teaspoon Baking Powder
- ½ cup Chocolate Rice Cereal
- ½ cup Cinnamon Cereal
- 1 cup Marshmallows
Instructions
- Preheat oven to 350 degrees.
- In a separate bowl, crush up chocolate and cinnamon cereal.½ cup Chocolate Rice Cereal, ½ cup Cinnamon Cereal
- In a large bowl, mix together butter, sugar, and brown sugar. Mix until everything is smooth and creamy.1 stick Butter, ½ cup Sugar, ½ cup Brown Sugar packed
- Add in one egg and vanilla extract. Mix together.1 Egg, 1 teaspoon Vanilla Extract
- Then, add in flour and baking powder. On a low speed, mix all the dry ingredients to the dough.1 ¾ cups Flour, ½ teaspoon Baking Powder
- Mix in half the crushed cinnamon cereal and chocolate cereal.
- Use a medium cookie scoop to scoop out the cookie dough. Flatten out the dough into a disk and place one large marshmallow.1 cup Marshmallows
- Roll into a ball, covering the marshmallow completely. Then roll the cookie dough ball in the remaining crushed cereal.
- Place on a baking sheet and bake for about 12-14 minutes, the centers will still be slightly gooey.
- Let cool slightly, and enjoy!
