White Chocolate Pistachio Cookies

These White Chocolate Pistachio Cookies are like the fancier cousin of peanut butter cookies, which makes them absolutely addicting! These cookies are made with homemade pistachio butter that's even easier to make than you think! By drizzling these cookies in white chocolate, then sprinkling on pistachios, you get the perfect crunchy snap paired with the soft and chewy middle! It's so good!

Pistachio Cookies

I knew that I wanted to make a white chocolate pistachio cookie but I wasn't sure how to get a cookie that would have pistachios in each bite. I wanted these cookies to be almost like a peannut butter cookie where you get perfect peanut butter flavor in each bite! That's when I came up with the idea of making homemade pistachio butter!

By adding the pistachio butter, you get the perfect pistachio flavor in each bite! Not to mention, it feels incredibly fancy to say you made your own pistachio butter!

Nut Butter Cookies

Making your own nut butter at home is actually easier than you think! The trick is that any nut blended long enough will release their own oils creating a homemade nut butter! To get a really smooth peanut butter-like consistency, you can add a teaspoon or so of coconut oil!

With that in mind, the options for homemade nut butter are basically endless! You could add in different sweeteners like maple syrup, brown sugar, honey, or vanilla extract!

Think about a maple brown sugar walnut butter! Blending walnuts, a little drizzle of maple syrup, a little scoop of brown sugar with some cinnamon and nutmeg! Doesn't that sound delicious?!

Because I'm adding this pistachio butter straight to the cookies, I didn't add any flavorings. However, if you were going to keep this pistachio butter for toast or other toppings, you could add a little sweetener if you would like!

  • Flour
  • Baking Powder
  • Baking Soda
  • Salt
  • Butter
  • Sugar
  • Brown Sugar
  • Egg
  • Vanilla Extract
  • Almond Extract
  • White Chocolate Chips
  • Pistachios

Equipment

  • 2 oz Cookie Scoop
  • Baking Sheet
  • Parchment Paper
  • Food Processor or Blender

Ingredients
  

  • 1 ¼ cups Flour
  • ½ cup Almond Flour
  • ½ teaspoon Baking Powder
  • Pinch Salt
  • 1 stick Butter room temperature
  • ½ cup Sugar
  • ½ cup Brown Sugar packed
  • ¼ cup Pistachio Paste
  • 1 Egg
  • 1 teaspoon Vanilla Extract
  • ⅛ teaspoon Almond Extract
  • 1 cup White Chocolate Chips
  • ½ cup Pistachios chopped

Pistachio Paste:

  • 1 ½ cups Pistachios raw and unsalted

Instructions
 

To Make the Pistachio Paste:

  • To a food processor, add in pistachios.
    1 ½ cups Pistachios
  • Blend pistachios until a paste forms, about 5-8 minutes.
  • To make a pistachio butter to spread on toast or oatmeal, add a teaspoon or so of coconut oil! Then store in an airtight container!

Making the Pistachio White Chocolate Cookies:

  • Preheat oven to 350 degrees.
  • Add butter to a large bowl with pistachio butter, sugar, and brown sugar. Mix everything together until light and fluffy.
    1 stick Butter, ½ cup Sugar, ½ cup Brown Sugar, ¼ cup Pistachio Paste
  • Add in egg, vanilla extract, and almond extract.
    1 Egg, 1 teaspoon Vanilla Extract, ⅛ teaspoon Almond Extract
  • Once all the wet ingredients are mixed together, add in flour, almond flour, baking powder, and salt.
    1 ¼ cups Flour, ½ teaspoon Baking Powder, Pinch Salt, ½ cup Almond Flour
  • Then use a cookie scoop to scoop out the dough and place on a parchment lined baking sheet.
  • Bake for about 10-15 minutes until the edges are just set, but they're still a little soft in the middle.
  • While the cookies are cooling, melt white chocolate in the microwave in 30-second increments until fully melted. Chop pistachios into small pieces.
    1 cup White Chocolate Chips, ½ cup Pistachios
  • Pour melted white chocolate into a plastic bag and drizzle over the cookies. Add a sprinkle of pistachios to the top.
  • Set on parchment paper and let the chocolate harden.
  • Serve and enjoy!
