Chocolate Pecan Spice Cookies

You are not going to believe how easy this cookie is to make! These Chocolate Pecan Spice cookies are made with less than five ingredients, and you have a delicious, soft, spice cookie with crunchy pecans and loaded with chocolate! Not to mention, the secret ingredient: box cake mix! I know, it's shocking!

The magic of cake mix

Sure, you can *obviously* make cake from a box cake mix and that would be delicious. Who doesn't love cake?!

But there is a whole boxed cake mix world out there just waiting to be explored! Or eaten, however you want to look at it. You might be wondering how this is even possible. Isn't baking an exact science? And cookies need differently measurements of flour than cake does! And not to mention, the sugar, baking powder, baking soda. This all true and a very good point, I'm so glad you asked!

At the bare minimum, baking is a combination of flour, sugar, leavening agent, and a binder. Baking is a science in that it needs a specific wet to dry ingredient balance. The box cake mix has certain ingredients to use to make it into a cake, but we're tweaking the wet ingredients to create a thicker dough and create cookies instead!

There's a ton that you can do with box cake mix; you can make muffins, cookies, biscotti, pancakes, etc. It's really impressive!

Double chocolate, double deliciousness

If there is one fundamental belief I follow in my kitchen, it's that chocolate should always be measured by the heart. Sure, I'm going to put a measurement in my recipe; it would be weird not to. But, you can add as much or as little as you'd like!

It's not going to mess it up!

If you want to go really chocolate crazy (like me), then you can add two different types of chocolate. You might not think it makes that big of a difference, but it really adds a depth to the chocolate! Especially if you use a combination like semisweet and milk chocolate. Or if you wanted to add dark chocolate, you can add in semisweet to balance out the bitterness in dark chocolate.

For these Chocolate Pecan Spice Cookies, I used a balance of semisweet and milk chocolate because that's my favorite!

Final notes for these Chocolate Pecan Spice Cookies

You can use whatever box cake mix you have! For these cookies, I used spice cake mix! I *highly* recommend using two different types of chocolate in these cookies for a delicious depth of chocolate!

If you close your eyes and take a bite, these almost taste like chocolate pecan pie.

Chocolate Pecan Spice Cookies

The quickest, easiest cookie you'll ever make! Filled with the flavors of fall, extra chocolate chips and crunchy pecans!

Ingredients
  

  • 1 box Spice Cake Mix
  • 2 Eggs
  • ½ cup Flavorless Oil
  • ½ cup Pecans chopped
  • 12 oz Chocolate chopped

Instructions
 

  • Preheat oven to 350 degrees.
  • Mix eggs and oil together.
  • Add in cake mix and stir together.
  • Add in chopped pecans and chocolate.
  • Scoop onto a parchment paper lined baking sheet and bake for about 15-17 minutes.
  • Serve warm and enjoy!

Notes

I like to use two different kinds of chocolate! I use a bar of chocolate and semi-sweet chocolate chips! I think it adds more depth to do it this way, but you can just go crazy with chocolate chips to make it easier!
