This Easy Chocolate Coconut Cookie Recipe is going to be your new favorite cookie! It's a soft chocolate cookie filled with creamy coconut and topped with chocolate chips and crunchy almonds. It's soft, chewy with a little crunch and absolutely loaded with flavor!

Step-By-Step Instructions
- Step 1: Mix together coconut and sweetened condensed milk.
- Step 2: Use a half tablespoon to form into balls and freeze.
- Step 3: Mix butter, sugar, and brown sugar together. Then, add egg and vanilla extract.
- Step 4: Add in flour, cocoa powder, and baking powder.
- Step 5: Flatten a disk of cookie dough before adding in a coconut ball.
- Step 6: Wrap the cookie dough around the coconut ball before topping with chocolate chips and almonds!
Hint: If the cookie dough is getting too sticky, you can let it set in the fridge for about 10 minutes to help the butter firm back up!

- Extra Coconut - if you don't feel like stuffing the cookies with coconut no worries, just add the chocolate chips, coconut, and almonds to the cookie dough like you would with chocolate chip cookies! Then you'll get a bite of coconut, almond and chocolate in each bite!
- Nut-Free - leave out the nuts for a delicious chocolate coconut treat!

Equipment
This recipe doesn't require any special equipment, but I always recommend using a cookie scoop to get even cookies! The more even your cookies are in shape, the more even they bake up! This prevents any cookies burning before the rest are baked!
I like to use my medium cookie scoop to get nice large cookies! I've linked a similar cookie scoop set to the one I use HERE!
Storage
In case you have any leftover cookies, I have a few tips to store them to make sure they last even longer!
- Make sure you store them in an airtight container! If it's not sealed properly, the air will cause the cookies to dry out!
- Store them in an airtight container in the pantry for about 4-5 days!
- If you do freeze them, I recommend freezing the cookie dough balls on a baking sheet for about an hour until they're hard. Then I transfer them into a freezer bag that's sealed tightly!
Top tip
Let the coconut harden in the freezer for about 30 minutes to help the coconut firm up before stuffing inside the cookies! This helps make a messy process just a little bit easier!

To make this recipe easier, I recommend letting the coconut freezing for at least 10 minutes. It helps the coconut stick together to roll into the cookie dough!

I love using dark chocolate chips in my cookie recipes because I think it helps balance out the sweetness of the cookie! For these, I would recommend either semi-sweet or dark chocolate!

- 2 oz Cookie Scoop
Ingredients
- 1 stick Butter
- ¼ cup Sugar
- ¾ cup Brown Sugar packed
- 1 Egg
- 1 teaspoon Vanilla
- ½ cup Cocoa Powder
- 1 ¼ cup Flour
- ½ teaspoon Baking Powder
- 1 cup Chocolate Chips
- 1 cup Chopped Almonds
- 2 cups Shredded Coconut
- ⅓ cup Sweetened Condensed Milk
Instructions
- In a bowl, mix together coconut and sweetened condensed milk. Stir together.2 cups Shredded Coconut, ⅓ cup Sweetened Condensed Milk
- Use a half tablespoon to scoop out little balls of coconut and place on a sheet. Place in the freezer for 30 minutes.
- Preheat oven to 350 degrees.
- In a bowl, cream together butter, sugar, and brown sugar.1 stick Butter, ¼ cup Sugar, ¾ cup Brown Sugar packed
- Then mix in egg and vanilla.1 Egg, 1 teaspoon Vanilla
- Add in cocoa powder, flour, and baking powder. Mix everything together.½ cup Cocoa Powder, 1 ¼ cup Flour, ½ teaspoon Baking Powder
- Then scoop out a ball of cookie dough and flatten in your hand. Add one ball of coconut to the middle. Then wrap the cookie dough around the coconut.
- Place on a baking sheet and top with chocolate chips and almonds.1 cup Chocolate Chips, 1 cup Chopped Almonds
- Bake for about 15 minutes.
- Let cool slightly and enjoy!
