Salted Caramel Cookies

Nothing better than a warm cookie with a center full of melty caramel. These Salted Caramel Cookies are a chewy, soft cookie stuffed full of caramel and finished with a sprinkle of flakey salt. Who needs chocolate chip cookies when you can have these!?!

Salted Caramel Heaven

Salted caramel has always felt like such a fancy, decadent treat to me. I’m not really sure why I associate salted caramel with fancy, but I do and I kind of love it. 

Who doesn’t want to feel fancy while eating a cookie, am I right?

The type of caramel that you pick for these cookies is actually really important to the texture of the cookie. For my local grocery stores, I can typically find three types of caramel candies: hard candy, really chewy caramels, and soft caramels. I recommend and suggest you go with the soft caramels. These will melt down just perfectly in the oven while still having that chewy, gooeyness we all love about caramel. 

If you go with the harder caramels, they could either burn in the oven or become really tough to actually chew. We don’t want anyone breaking a tooth on our cookies, okay?

Add a generous sprinkle of flakey salt on the caramel and these Salted Caramel Cookies are ready to be devoured.

What About Vanilla?

Before I really started baking and getting in to the science of it, I only used to add vanilla to vanilla desserts. Let me tell you how much a mistake that was. 

My desserts fell flat and were missing a certain sweetness that I couldn’t seem to fix. 

Vanilla doesn’t just add vanilla flavor, it adds a rich, sweetness that enhances the flavors in the cookie itself. Now, I add vanilla to everything! Every flavor of cookie, every cake, every brownie, every blondie, I think you get my point. 

Not to mention, that vanilla is in the caramel itself which helps connect the caramel flavor to the cookie as well! 

Ingredient List

  • Flour
  • Baking Powder
  • Salt
  • Butter 
  • Eggs
  • Sugar
  • Brown Sugar 
  • Vanilla
  • Caramel 
  • Flakey Salt 

The caramels in this obviously steal the show. However, don’t forget the important of the supporting actors with the vanilla and the salt. 

The vanilla is crucial to make sure that the cookie itself tastes just as delicious as the caramel in the middle!

Adding salt enhances the sweetness of the caramel and the cookie which makes these cookies absolutely addicting! 

Tips and Tricks

One trick for these cookies is to make sure that there’s an even amount of cookie dough wrapped around the caramel. As the caramel melts, you want the cookie to hold it in and pool in the center. Obviously, if some of the caramel spills out that’s okay too! But the thicker edge you have around the caramel, the better it will stay in the middle. 

If you are baking in a warmer environment, you might want to chill the cookie dough for about 10 minutes to make sure the cookie holds it’s shape while baking! 

I love how the melty caramel pairs with the warm cookie. Breaking the cookie in half and seeing how the caramel just melts apart literally makes my mouth water thinking about it. 

Not to mention how *delicious* these cookies will make your house smell.

Salted Caramel Cookies

These Salted Caramel Cookies are a chewy, soft cookie stuffed full of caramel and finished with a sprinkle of flakey salt. Who needs chocolate chip cookies when you can have these!?!

Ingredients
  

  • 2 cups Flour
  • ½ teaspoon Baking Powder
  • ½ teaspoon Salt
  • 1 stick Butter room temperature
  • 1 Egg plus one egg yolk
  • ¼ cup Sugar
  • ¾ cup Brown Sugar packed
  • 2 teaspoons Vanilla
  • 12 Caramels chewy
  • Flakey Salt garnish

Instructions
 

  • Preheat oven to 350 degrees.
  • Add room temperature butter to a bowl and whip using a hand mixer
  • Add in brown sugar and sugar to the butter and whip together.
  • Add in the egg and egg yolk, then mix.
  • Add in vanilla.
  • To the butter mixture, add flour, baking powder, and salt. Whisk together.
  • Take a medium cookie scoop and place the cookie dough in your hand.
  • Push your thumb into the center of the cookie dough to make a little well. Place one caramel in the middle. Then place on a parchment-lined baking sheet.
  • Bake for about 13-15 minutes.
  • Sprinkle with flakey salt and enjoy!

Notes

It's really important to use the chewy caramels from the store! The harder caramels will make the cookie too tough!
