Snickers Cookies

The perfect combination of crunchy peanuts, melty chocolate, and gooey caramel all wrapped up into these delicious Snickers Cookies. I know you were probably thinking that this recipe is just a regular cookie recipe filled with chopped up candy, but it's so much more than that. If you're looking for a cookie with the perfect sweet and salty combo, you've found it!

What is a Snickers Cookie?

The idea for this cookie came to me after seeing a picture of melty gooey caramel and I knew that I needed to think of a recipe to that would have the most perfect caramel pull moment. However, despite having multiple sweet teeth hiding in me, I really like a good balance between sweet and salty. No one wants to eat a cookie that feels like it's going to send them straight to the dentist with a cavity.

These Snickers Cookies feature the perfect balance of sweetness from the sugar in the cookie dough and the sweet caramel with the salty peanuts and the pinch of salt at the end. I like to use dark chocolate chips in this recipe because the chocolate isn't overly sweet. You can use semi-sweet or milk chocolate if you want, but that will make this cookie sweeter.

And for those who are skeptical about the flakey salt at the end, just trust me. You need it for that salted caramel moment. But if you really want, I guess you could leave it off! But maybe just try one cookie with the salt, for me!

Caramel Cookie Tips and Tricks

When it comes to adding caramel into cookies, there's a few different options to choose from. Over the years, I have tested out different types of caramels and I prefer to use a soft caramel when I'm working with cookie dough.

If you are someone who likes the harder crunchy caramels, you could crush them up and use them in this cookie dough if you'd like. Personally, I don't like the hard crunch of the caramel in this cookie recipe, I think the peanuts add the perfect crunch! However, these are your cookies so you can add whatever caramel you like!

The other caramel option is one that's typically used for caramel apples, they come in the little cube shapes! Those do melt slightly when you're making the cookies, but the problem is they do firm back up after the cookies are done baking. This results in a very, very chewy caramel that could get stuck in your teeth. Again, if you like that kind of caramel, you can use it!

I like the soft caramels that melt just right while the cookies are baking!

  • Flour
  • Baking Powder
  • Cornstarch
  • Salt
  • Butter
  • Sugar
  • Brown Sugar
  • Egg
  • Vanilla Extract
  • Peanuts
  • Dark Chocolate Chips
  • Soft Caramel Candies

These Snickers Cookies are the perfect combination of sweet and salty. I love the flavor combination of the crunchy peanuts with the soft caramel.

The last little hit of salt at the end makes these cookies so addicting!

Ingredients
  

  • 1 ⅔ cups Flour
  • ½ teaspoon Baking Powder
  • 1 teaspoon Cornstarch
  • Pinch Salt
  • 1 stick Butter room temperature
  • ½ cup Sugar
  • ½ cup Brown Sugar packed
  • 1 Egg
  • 1 teaspoon Vanilla Extract
  • ½ cup Chopped Peanuts
  • ½ cup Dark Chocolate Chips*
  • 12 Soft Caramel Candies
  • Flakey Salt for garnish

Instructions
 

  • Preheat the oven to 350 degrees.
  • Cream together butter with brown sugar and sugar.
    1 stick Butter room temperature, ½ cup Sugar, ½ cup Brown Sugar packed
  • After the sugar has been fully incorporated, add in the egg and vanilla extract.
    1 Egg, 1 teaspoon Vanilla Extract
  • Then add in flour, baking powder, cornstarch, and salt.
    1 ⅔ cups Flour, ½ teaspoon Baking Powder, Pinch Salt, 1 teaspoon Cornstarch
  • Once the mixture is almost mixed together, add in chocolate chips and chopped peanuts
    ½ cup Chopped Peanuts, ½ cup Dark Chocolate Chips*
  • Using a medium cookie scoop, scoop out the dough onto a parchment lined baking sheet.*
  • Gently press the cookie dough into a flat disc.
  • Unwrap the caramel candies and roll into a ball. Gently press the caramel ball into the middle of the cookie dough.
    12 Soft Caramel Candies
  • Bake for about 15 minutes when the edges are golden brown and the caramel is soft and melty,
  • Sprinkle with some flakey salt, and enjoy!

Notes

*These cookies do have a tendency to spread, so I like to place them a few inches apart! If you're worried about them spreading, you can always chill the dough for about 45 minutes! If they do spread too much while they're baking, you can use a round cookie cutter to swirl the cookies around as soon as they come out of the oven. This will help push the edges of the cookie back into itself creating a smaller, perfectly round cookie!
